I made Sweet Potato Pot Pie for the first time last night. It was pretty good but I added extra things to it that made it less healthy.
I added sugar, cilantro, ground pepper, and threw in 1 chopped carrot after all the other veggies were cooked for texture. I also used fat free milk instead of what was called for in the recipe. Then after serving I topped it off with mozzarella and a large dollop of sour cream. The puff pastry was the frozen Pepperidge Farm Shells.

Next time I'm gonna ignore the vegetarian part and throw in a tiny bit of bacon.
